It seems that blueberries’ farm nearby is an excellent one since the blueberry price is totally acceptable and the fruits are heavenly tasteful. When it’s their season, you can really find them everywhere which was not the case until two years ago.

So, we started with experiments to make healthy recipes using fresh fruits. We started with pancakes. These are not diary free since you need some sour cream to mix them, and whipped cream to garnish before serving.

Chia seeds seem perfect to combine with flour, baking powder, sugar, and wet ingredients to start a new healthy breakfast habit. Although tagged as breakfast, chia seed pancakes can easily be served as afternoon snack or dessert. If you pour a bit of maple syrup on the top, you get a lovely healthy recipe to enjoy with your coffee.

Wintertime and holidays brought all sorts of cookies and calories loaded recipes so January seems perfect to start with chia pancakes as the beginning of calories free season; at least for a while 😊

Also, it’s good to know blueberries are available throughout the year, fresh or frozen so there are all the ingredients available to enjoy these blueberry chia homemade pancakes throughout the year since both versions work quite well.

Can you use any type of flour for pancakes?

We use all-purpose flour, whole wheat flour, or a combination of the two. As for the crepes, too !

 

Can I use self-rising flour instead of plain for pancakes?

Yes, of course. Self-rising flour contains salt and baking powder so it tends to make a thicker batter – meaning it may make a fluffier American-style pancake.

Ingredients

  • 18 Tbsp flour
  • 1 egg
  • 3 Tbsp sour cream
  • ΒΎ cup milk
  • 1 Tbsp baking powder
  • 3 drops lemon extract or lemon zest to taste
  • 2 Tbsp chia seeds
  • 1 cup blueberries + to garnish
  • 4 Tbsp sugar
  • Whipped cream, optional
  • fresh blueberries to garnish

Instructions

  1. In a bowl, mix egg, sour cream, lemon extract, milk and chia seeds.
  2. Add flour, baking powder and sugar. Mix well.

  3. Gently combine blueberries to keep them whole.

  4. Ladle the batter onto a hot griddle. Cook up to 2 mins on each side.

  5. Repeat with remaining batter, making 11 pancakes.
  6. Serve with whipped cream or any spread to taste. Garnish with fresh blueberries.
