Blueberry Chia Pancakes : easy, healthy and popular !
It seems that blueberries’ farm nearby is an excellent one since the blueberry price is totally acceptable and the fruits are heavenly tasteful. When it’s their season, you can really find them everywhere which was not the case until two years ago.
So, we have a new healthy habit of falling in love with these healthy berries. Although tagged as breakfast, it is needless to say we had the leftovers for an afternoon snack; you know the moment : you would just like to have something …… not chocolate, not ice cream but something home made, if possible, because we are used to have home made something in the kitchen.
Winter time calls for cookies but after the holidays, healthy breakfast leftovers seem quite all right. 🙂
Blueberry Chia Pancakes
- 18 Tbsp flour
- 1 egg
- 3 Tbsp sour cream
- ¾ cup milk
- 1 Tbsp baking powder
- 3 drops lemon extract
- 2 Tbsp chia seeds
- 1 cup blueberries + to garnish
- 4 Tbsp sugar
- Whipped cream, optional
In a bowl, mix egg, sour cream, lemon extract, milk and chia seeds.
Add flour, baking powder and sugar. Mix well.
Gently combine blueberries to keep them whole.
Ladle the batter onto a hot griddle. Cook up to 2 mins on each side.
Repeat with remaining batter, making 11 pancakes.
Serve with whipped cream or any spread to taste.
