Speculoos ( aka Biscoff ) Bread with Almonds : I’ve heard some rumors that Santa made a double batch !
Wherever we travel, there are some useful things we buy to take home. It’s spices, books, fridge magnets and Hard Rock Cafe T-shirts. I do not know if those are souvenirs or not since we use all of them. Speculoos spices mix traveled with us home from Netherlands waiting for cold weather to be used. Speculoos ( aka Biscoff ) Bread with Almonds is perfect way to include the mixture into your autumn and winter breakfasts .
Of course, you can make Speculoos mixture by yourself since all the ingredients are available so if you combine 2 tsp cinnamon, 1 tsp ground nutmeg, ½ tsp ground cloves, ½ tsp ground cardamom, ½ tsp ground ginger, and ground anise seed to taste, you have your own home made jar of Speculoos mix. Some of my friends add some ground white pepper to taste.
Since my son is included in purchasing process, he is into tasting, too. I am glad to see he is opened to the experiences of new and unknown. I did not want it to sound like discovering mysteries and spaces but …. who knows …
If you think of a good story to implement during the process, like I do with my son, children can hardly wait to taste what you offer. It’s all about good marketing strategy, isn’t it ?

Speculoos ( aka Biscoff ) Bread with Almonds
- 2 eggs
- 3/4 cup rye flour
- 1 ¼ cup all purpose flour
- 1 Tbsp dry yeast
- Pinch of salt
- 1 ½ tsp Speculoos spices mix
- ¾ cup honey
- 6 Tbsp butter, room temperature + for the pan
- 3 Tbsp almond slices
In a small pot, slowly melt honey and butter. Take away from the heat and leave aside.
Preheat the oven to 180 C / 356 F.
Butter the bread pan.
Beat the eggs and add them to melted honey and butter.
In medium sized bowl, combine rye and all purpose flour, dry yeast, spices mix and salt.
Add wet ingredients and mix until well combined.
Pour the batter into the bread pan and sprinkle with almond slices.
Bake for 38 minutes or until toothpick inserted in the middle comes out clean.
Serve with your favourite spread.
