Speculoos ( aka Biscoff ) Bread with Almonds is the best ! We’ve heard some rumors that Santa made a double batch !
Wherever we travel, there are some useful things we buy to take home. It’s spices, books, fridge magnets and Hard Rock Cafe T-shirts. I do not know if those are souvenirs or not since we use all of them in our everyday life.
Speculoos spices mix, store bought, traveled with us home from Netherlands waiting for cold weather to be used. Speculoos ( aka Biscoff ) Bread with Almonds is perfect way to include the mixture into your autumn and winter breakfasts .
This breakfast bread is two flours mix and is quite festive and comforting.
So, the best about rye flour is that it makes you full quite easily. Speculoos mix gives such a characteristic Nordic flavours and roasted almonds on the top are full of nutrients, so tasty and crunchy.
Once you decide to make this Speculoos ( aka Biscoff ) Bread with Almonds breakfast loaf, feel free to add chocolate chips into the batter before baking. Chopped almonds are great to add too.
We tried both versions and they are equally tasty as the one I posted today. This version is as simple as possible and you can always add your favourite chocolate chips.
Once finished, I simply dip my slice of this breakfast bread into coffee but my son highly recommends to spread a slice with speculoos cookie butter or chocolate spread. Not bad at all !
In case you wonder how to get Speculoos mix, you can make it on your own; the ingredients are available everywhere, so if you combine 2 tsp cinnamon, 1 tsp ground nutmeg, ½ tsp ground cloves, ½ tsp ground cardamom, ½ tsp ground ginger, and ground anise seed to taste, you have your own home made jar of Speculoos mix.
Some of my friends add some ground white pepper to taste.
I keep our bread on the kitchen counter, on bread plate with a cover. It remains fresh up to three days, stored this way.
Now, we all know there are picky eaters among children.
Since there is always a need for a good story to implement, my marketing strategy is as follows : “ There are some rumors that Santa made a double batch. What about your single slice baby ? “
It all comes down to high quality promotion, doesn’t it ?

Ingredients
- 2 eggs
- 3/4 cup rye flour
- 1 ¼ cup all purpose flour
- 1 Tbsp dry yeast
- Pinch of salt
- 1 ½ tsp Speculoos spices mix
- ¾ cup honey
- 6 Tbsp butter, room temperature + for the pan
- 3 Tbsp almond slices
Instructions

In a small pot, slowly melt honey and butter. Take away from the heat and leave aside.

Preheat the oven to 180 C / 356 F.

Butter the bread pan.

Beat the eggs and add them to melted honey and butter.

In medium sized bowl, combine rye and all purpose flour, dry yeast, spices mix and salt.

Add wet ingredients and mix until well combined.

Pour the batter into the bread pan and sprinkle with almond slices.

Bake for 38 minutes or until toothpick inserted in the middle comes out clean.

Serve with your favourite spread.
