North Pole Brownies Ice Box Cake is kid friendly three ingredients chocolate and mint dessert. No baking time required. Done in 15 minutes only!
Do you grow any herbs on your balcony? I have lots of the pots on all the sides and constantly rearrange them to find the best spot for all of them. Since I got some brunches for Mint Syrup Quick Versionย , and used some to get Mint Jelly which is only one simple step further once you make your batch of syrup, this brownies recipe was easy to make.
You can find all the jelly details on the same link as for the syrup. Anyway, I planted mint brunches leftovers then and am happy to say they had successfully grown into a bush. Controlled in size, of course, since my balcony became a herbs jungle paradise.
How to make North Pole Ice box?
I used store bought brownies. Simple version. You may also use double chocolate brownies with chocolate chips for your batch of icebox cake and crumble them to make your own version.
That way, your ingredients will combine even better for the best results! No extra sugar added. No baking required.
During preparation, make sure to mix whipped cream in advance so you start making layers: brownies to the bottom of your dish, sprinkle with mint tea, cover whit whipped cream and spread with mint jelly and repeat it with the remaining ingredients.

Ingredients
- Store bought brownies (13 x 9 inches)
- 2 cups whipping cream
- 5 Tbsp mint jelly
- 6 Tbsp mint tea, optional
Instructions

Prepare 4 cups volume dish.

Cut store bought brownies to small bars ( 1 x 3 inches approx. )

Mix whipping cream to form stiff peaks.

Lay first layer ( half of total quantity ) of brownies to the dish.

You may sprinkle the brownies with 3 Tbsp of mint tea ( optional ).

Cover the brownies with 7 Tbsp of whipping cream.

Cover the whipping cream with mint jelly.

Repeat the steps 4. โ 7.

Garnish with mint jelly and brownies' crumbles.

Cool overnight in the fridge before serving.

If any whipped cream left, serve with ice box cake.
Recipe Notes
Note: to emphasize mint flavours, you may add some mint extract ( few drops will do ) to whipped cream to get extra cooling effect!
