Cannoli Cones with Figs, Honey and Almonds : the best for Canicular and every other kind of days !
Cannoli, figs, honey and almonds are among the best ingredients for Canicular days since they really require minimum of time to prepare nutritious meal, sweet or savoury, served separated or combined together.
I cannot emphasize enough how deeply I am impressed by figs and, since I have already written about my fascination with them while posting Rustic Mediterranean Fig Cookies there are still some more information I would really like to share with you :
Old Testament, besides teaching about the values of life, clearly shows the ancient ways of eating habits, as well.
When date tree was spotted it was reliable sign that water in nearby ( think of all the oasis with ponds surrounded with dates ).
Olives, walnuts, figs, pomegranates, dates, carobs, almonds were perfect food suppliers for the peoples and their quests described in ancient scripts of all religions of Mediterranean Basin.
Their perfect composition was an irreplaceable source of vigor the tribes needed while establishing the pillars of civilization. Some of them, at least.
That is why I enjoy watching them grow and respect every single fruit that ripes and offers itself so generously for thousands of years, unselfishly.

Cannoli Cones with Figs, Honey and Almonds
- 6 pre-made ice cream cones, dipped in chocolate ganache
- 1 cup Ricotta
- 1 cup whipping cream
- 1 Tbsp honey
- 1/2 tsp almond extract
- 1/2 fig, finely chopped
- Roasted almond slices to garnish
In a large bowl, mix whipping cream until stiff peaks form.
Add honey, almond extract and Ricotta, slowly mixing.
Add chopped fig into mixture and gently combine, using spatula.
Transfer mixture into a piping bag and pipe into cones.
Garnish with roasted almonds and honey and serve immediately.
