Pan Seared Cod in Tomato Sauce is delicious one pan cod fillets dish with tomato basil sauce. Shakshuka style cod is another name for easy fresh cod recipe so popular to enjoy on Good Friday! Ready in 30 minutes!
This pan seared cod is one of the kitchen trials I have implemented for the sake of healthier eating during our weekdays. No bone fish is the easiest path to start with fish if cooking for children.
So, I made this cod recipe deliberately, thinking that nothing bad could come out of joined forces of delicious fresh fish and tomato basil sauce . It is tomato sauce with herbs that I preserve every year and use as spaghetti sauce or as an addition to all the dishes requiring tomato sauce of any type. Homemade. The best!
Simple polenta garnished with red pepper flakes is our choice to serve with most of fish and meat dishes so this Italian cod in tomato sauce is not an exception.
Does polenta make you fat?
Polenta is low calorie, similarly to other whole grains that are cooked in a liquid. It provides about 70 calories per 100 grams (g) cooked serving. Nutritious, whole foods that are low in calories, such as polenta, can be a good choice for people looking to lose or maintain weight.
Since polenta is healthy side dish, you may serve it instead of potatoes or rice with lunch or dinner.
Top polenta with favorite baked-potato toppings. Make polenta with goat or feta cheese, sundried tomatoes, and fresh basil. It tastes fine with Feta and Mushrooms Stuffed Turkey Meatballs from Scratch , or Shakshuka with Quail Eggs or Spanish Chorizo and Chickpea Summer Soup !
If you look at the ingredients’ list, there is no Italian seasoning since I use homemade tomato salsa that already has it all. So, if you prefer to have herbs, feel free to add suiting your preferences. Suggested are basil, oregano, thyme, peperoncini and garlic.

Can I cook 2 different types of fish in the same pan at the same time ?
Of course! If you haven’t tried it yet, I highly recommend you brodetto, which is a fish stew, the Italian equivalent of bouillabaisse.
What is brodetto made of?
It is made with up to 12-13 types of fish (any permutation of the likes of scorpion fish, monkfish, greater weever, sole, red mullet, turbot, hake, John Dory, grey mullet, skate, octopus, squid, scampi, king prawn and razor-shell)
