This pan seared cod is one of the kitchen trials I have implemented for the sake of healthier eating during our weekdays. No bone fish is the easiest path to start with fish if cooking for children.
So, I made this cod recipe deliberately, thinking that nothing bad could come out of joined forces of delicious fresh fish and tomato basil sauce . It is tomato sauce with herbs that I preserve every year and use as spaghetti sauce or as an addition to all the dishes requiring tomato sauce of any type. Homemade. The best!
Simple polenta garnished with red pepper flakes is our choice to serve with most of fish and meat dishes so this Italian cod in tomato sauce is not an exception.

If you look at the ingredients’ list, there is no Italian seasoning since I use homemade tomato salsa that already has it all. So, if you prefer to have herbs, feel free to add suiting your preferences. Suggested are basil, oregano, thyme, peperoncini and garlic.

Can I cook 2 different types of fish in the same pan at the same time ?
Of course! If you haven’t tried it yet, I highly recommend you brodetto, which is a fish stew, the Italian equivalent of bouillabaisse.

Ingredients
- Ingredients for main dish:
- 1.3 lb cod fillet, cut to three pieces
- 2 Tbsp olive oil
- 1 cup tomato sauce
- Garlic and ground black pepper to taste
- 1 cup water
- 1 onion, quartered
- Rosemary and chopped parsley leaves to garnish
- Ingredients for polenta side dish:
- 3 cups water
- Salt to taste
- 12 Tbsp polenta
Instructions

In a small bowl, mix tomatoes sauce, garlic and ground black pepper and water. Leave aside.

Heat a skillet over medium heat and add olive oil. Place the cod fillets into the skillet and season with salt to taste.

Cook for 2 minutes or until the fish gets nice golden colour.

Then carefully turn the cod over and cook for another 2 minutes.

Pour tomato sauce mixture over cod fillets together with quartered onion.

Gently boil on low heat for 10 minutes.

If necessary, gently shake the skillet instead of mixing the ingredients with spatula. ( You do the same with brodetto! 🙂 )

While the cod is slowly boiling, mix polenta ingredients in medium sized pot and bring to boil.

Boil stirring constantly for 5 minutes.

Serve immediately.
