To start with, prepare large bowl to combine all the ingredients in. You don’t need tortilla and cut it to strips. If you find half a package of yesterday’s corn tortillas, this is great base for easy chilaquiles frittata.

Instead of Pepper jack cheese, we used Feta. It is salty so be careful with salt if this one is your option. Some guys add corn, bell pepper and bacon.

 

We used Spanish Chorizo sausages since we had some to slice and use the leftovers but you can use whichever you prefer as long as they are cured. It means they are safe to eat without boiling. Our version was smoked and it added special smoky, comforting, and tasty flavours.

As about tomato sauce , you can use tomato puree or, salsa, diced tomatoes, canned tomatoes or pelati. It’s all about what you find in your pantry. This is why we love this bake that much. Simplify your ingredients (leftovers) for the best results!

So, this is one of those simple yet seductive meals that we could eat over and over again. The dish itself tastes different every time, depending on the leftovers we have in the fridge. As long as it includes tortillas or tortilla chips and Mexican spices, it feeds the whole family. This one is made of 8 whole eggs and can feed 4 people. Since all the ingredients are already salty, be careful with adding extra salt to the dish.

Ingredients

  • 4 cups Spicy Tortilla Chips, crushed
  • 8 eggs
  • 1 ½ cup sliced sausage
  • 1 ½ cup Feta cheese, cubed
  • 2 tsp crispy fried onions
  • 1 tsp garlic powder
  • ½ tsp chili powder
  • 1 tsp baking powder
  • 2 Tbsp sunflower oil
  • 4 Tbsp tomato sauce
  • 2 Tbsp heavy cream
  • Salt to taste
  • Heavy cream and parsley flakes or fresh cilantro to garnish

Instructions

  1. Preheat the oven to 356° F / 180° C.
  2. In a large bowl, whisk the eggs and heavy cream.

  3. Add cheese, sausages, onions, garlic, chili, baking powder and crushed tortilla chips to the mixture.

  4. Heat the oil and tomatosauce in a 10-inch oven-proof skillet.

  5. Pour the mixture into the skillet and bake for 25 minutes.
  6. Serve immediately, garnished with heavy cream and parsley flakes or cilantro.
