If you look at the photos, it may look complicated to make this breakfast but it’s far from truth!

Rolls are simple and quick to make and the result are these eye catching cheesecake rolls. The base is yeast dough, (no baking powder) made in a bowl with some bitter cocoa powder.

It may also be the case you already have some Crazy Dough already waiting in your fridge ! if so, use ¼ of the whole batch to get 12 rolls. That way, you get proper ratio of the dough and the filling.

Having some in the fridge, you need even less time to make this amazing breakfast !

How to make chocolate cheesecake filling?

 

The ingredients are success proof: cream cheese, vanilla extract, lemon zest, sugar, egg, and semolina. You simply combine them all with hand mixer and your chocolate rolls with cream cheese filling are ready to finish.

Semolina makes the filling thicker, so it does not leak out once the unsweetened cocoa rolls are ready to cut.

You can freeze Chocolate Cheesecake Rolls, absolutely. Once baked, place cooled rolls on cookie sheet; place in freezer until solid.

Place frozen rolls in quart-size resealable plastic freezer bag in freezer. To serve, remove desired number of rolls from bag, and reheat in microwave, oven or skillet until heated through.

Ingredients

  • Ingredients for the dough:
  • ¼ cup milk
  • 1 tsp sugar
  • 1 tsp instant yeast
  • 1 ½ cup all purpose flour
  • 1 Tbsp + 1 tsp bitter cocoa powder
  • ¾ tsp baking powder
  • ¾ tsp salt
  • ¼ cup + 2 Tbsp plain yogurt
  • 1 egg
  • Ingredients for the Cheesecake filling:
  • 3 Tbsp semolina
  • 1 egg
  • 1,5 tsp vanilla extract
  • 1 tsp lemon zest
  • 4 Tbsp cream cheese
  • 2 Tbsp sugar
  • melted butter to brush the rolls before serving, optional

Instructions

  1. Combine the dough ingredients and set aside.

  2. Preheat the oven to 175 C/ 347 F.
  3. Cover your baking dish with butter or cooking spray. Leave aside.

  4. In a medium sized bowl, mix the cheesecake ingredients.
  5. Roll the dough to get rectangle shape (11 x 11 inches approx)

  6. Spread the filling over the dough.
  7. Roll the dough into a log.

  8. Cut the log to get 14 slices and place them into a buttered pan.
  9. Let the slices rise for 5 – 10 minutes and bake for 20 – 25 minutes.
  10. Brush with melted butter before serving.
