This creamy horseradish soup is very easy to make since you don’t need freshly grated horseradish root but it’s cream or sauce. It is easily found in grocery store so it makes this recipe so easy and simple to make.
It is vegetarian dish but you may combine the ingredients with beef or chicken stock but then it is not vegetarian dish any more.
How does horseradish taste like ?
Horseradish is strong and spicy. If you grate the root yourself, it may bring tears into your eyes. That’s why my brother in law wears dive mask when grating fresh root for Easter brunch. I’m serious. Totally. And it works !
Horseradish produces heat on your tongue while eating and bring tears. That is why people combine grated horseradish with sour cream or vinegar. They make it mild.
Is horseradish healthy ?
It is used for medical purposes for centuries. It increases facial circulation, helps to clear the sinus passages and supports ease of mucus out of the upper-respiratory passages.
Healthy side makes this creamy soup a great comfort food with health benefits for cold and windy autumn and winter days.
How long can a jar of horseradish cream last in your fridge, once opened ?
In my experience, it lasts for three months.
If you store your horseradish cream in the freezer, it can stay there up to a whole year !
Why horseradish turnes gray ?
Horseradish is high in acid and the oxygenation process ( once the jar is opened ) makes it gray which causes discoloration. However, it doesn’t affect the taste.
If horseradish taste reminds you of wasabi, you are on the right track :
Both belong to the same family of plants that include cabbage, brussels sprouts and broccoli.
Horseradish root is white inside and brown outside.
Wasabi, on the other hand, is bright green stem. It is extremely hard to grow it and it reaches the price of approx. 180 USD for two pounds.
In most of the cases, if you bump on budget friendly wasabi paste, there is a high possibility that you are offered green coloured horseradish.
In German, horseradish is called meerrettich ( sea radish ) because it grows by the sea.
And now, here are two Creamy Horseradish Soup recipe related notes regarding preparation and serving suggestion :
- You may add instant mashed potatoes to the soup if you don’t have good old fashioned potatoes at hand.
- To make this week dinner attractive, I added halves of hard boiled eggs, edible flowers, ground black pepper and smoked paprika.

Ingredients
- 3 cups yellow potato cubes, precooked
- 2 cups vegetable stock
- Salt and ground black pepper to taste
- 4 tsp horseradish sauce / cream
- 5 Tbsp heavy cream
Instructions

In medium sized pot, on low heat, mash precooked potatoes, add vegetable stock, horseradish sauce / cream, salt to taste and ground black pepper. Mix well.

When soup starts to boil, add heavy cream and boil for 2 – 3 minutes. Stir constantly on medium heat so the mixture becomes smooth and creamy.

Serve warm, garnished according to your preferences.
Recipe Notes
I suggest you skip any onion or garlic in horseradish soup recipes since the taste of horseradish is diminished by their intense flavours.
