Caramel Pecan Cookies are made with love, caramel candy and pecans. Caramel candies melt during baking and make such a tasty mess ! So easy to make, like every mess π
Once you put all the ingredients together, the dough looks like shortbread pecan sandy type cookie recipe. As soon asΒ baking starts, caramel candy ( toffee, some might say ) starts to melt and as soon as your batch is finished, you enjoy melted caramel both inside and outside each cookie. It does not burn. It just melts.
When the cookies cool on baking sheet, caramel thickens and sticks to each cookie. Now, the best part begins: you break sweet caramel and enjoy caramel pecan cookies with a glass of milk.
Since I mentioned caramel and toffee, you may ask what is the difference between caramel, caramel candy, toffee and even butterscotch since caramel in these caramel pecan cookies can easily be substituted with butterscotch chips. The only difference is that you donβt get that melting caramel running out of your cookies then β¦β¦.
Letβs start with caramel: it is made of sugar. You just slowly warm it up to 190 C / 370 F. Doing so, you get deep golden liquid, packed with rich flavours.
Caramel candies are caramels. They are dense, soft chewy product made with milk or cream, sugar, vanilla and butter. Toffee is made of sugar, butter and flour. In lots of cases, ground almonds are added to the mixture.
If you decide to replace caramels with butterscotch chips inΒ Caramel Pecan Cookies recipe, the taste is a bit different since these are made with brown sugar. And they don’t melt.
Are caramels vegan ?
No. Milk is one of their basic ingredient. Also, they are loaded with butter and heavy cream.
Some cookies or biscotti recipes bring back the childhood memories back. Especially those vintage, traditional recipes.
Do you remember your grandmotherβs kitchen flavours? I remember mine, very well. That is because, in spite of her busy schedule, she always insisted that we should all gather on Sundays and holidays and just be together. Today, I find that invaluable.
This cookie dough can be made with the whole family.
If you gather around the table for a βCookies eventβ, please do the caramel cutting part yourself. To get 1/2 cup of chopped candies, I needed 10 caramels. The photo shows the caramelsβ size compared to the pecans.

Caramel Pecan Cookies

Ingredients
- 5 Tbsp ground pecans
- 1/2 cup caramel candies, chopped
- 7 Tbsp butter ( 3/4 stick + 1 Tbsp )
- 1/2 cup brown sugar
- 1 whole egg
- 1 egg yolk
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 3 Tbsp milk
- 1 egg white + 1 Tbsp milk for egg wash
- 28 pecan halves
Instructions

Put all the ingredients together and combine on the table until you get an even cookie dough. You may also combine all the ingredients in a medium sized bowl.

Preheat the oven to 190 C / 375 F.

Cover a sheet cake pan with parchment paper.

Whisk egg white and milk in small bowl and leave aside.

Take the little balls using cookie scoop, roll and press onto the parchment paper, using your hands to get 1 1/2 to 2 inches size cookies.

Coat the cookies with the egg white mixture.

Press the pecan halves on to the cookies.

Bake for 12 β 13 minutes.
