This banana bread recipe includes two table spoons of sugar only. I added the same quantity of honey to make it healthier. It is budget friendly since you need one ripe banana. The result is moist, tasty and simple to make yogurt banana bread.

 

How to make banana bread with yogurt ?

For this yogurt banana bread recipe, you need only one bowl for the batter. Just simply combine all the ingredients and pour them into prepared loaf pan. As simple as that!

Usually, we prefer using brown sugar but I would not recommend it for this bread. White sugar makes it bright and light.

In case you find out you’re out of yogurt and most of the ingredients are already mixed up, what to do ?

Sour cream is wonderful substitution for plain yogurt. You can use the two interchangeably in most baking recipes. Greek yogurt is also great. You may thin it out with milk or even water to get regular yogurt consistency.

I would not recommend replacing yogurt with milk only. It may spoil your batter since it will be runny and impossible to bake properly!

If you use cream cheese do the same as with Greek yogurt: thin it out with milk or water.

The icing is quite soft and so can be smudged when the cake is wrapped, which would spoil the look of the cake. Once the cake has cooled completely, carefully wrap it in double layer of cling film. Freeze up to two months.

Ingredients

  • Ingredients for batter:
  • 2 egg yolks
  • 2 eggs
  • 1 banana, ripen
  • 12 Tbsp all-purpose flour
  • 2 Tbsp honey
  • 6 Tbsp Yogurt
  • 2 Tbsp white sugar
  • Pinch of salt
  • 2 tsp baking powder
  • butter for the bread pan
  • Ingredients for glaze:
  • 2 Tbsp white sugar
  • 2 cups yogurt
  • 2 Tbsp gelatin or agar flakes
  • Vanilla extract to taste

Instructions

  1. Preheat the oven to 180 C / 356 F.
  2. Butter your bread pan and leave aside.

  3. Peel and mash one ripe banana in medium sized bowl.

  4. Add egg yolks, eggs, honey and yogurt.

  5. Slowly add dry ingredients: flour, salt, sugar and baking powder.

  6. Combine all the ingredients to have smooth batter and pour it into prepared bread pan.

  7. Bake for 25 minutes or until a wooden skewer inserted into the center of the loaf comes out clean.

  8. Leave the loaf to cool after baking on a wire rack.

  9. For glaze, mix sugar with gelatin or agar first, in a mug.

  10. In saucepan, mix yogurt and gelatin mix and boil for 2 minutes on medium heat, constantly stirring it.

  11. Pour over cooled quick bread and serve.
