Rustic Vegetarian Spinach Tart

It is late summer, the best season to use the vegetables and fruits naturally ripen. The taste is irresistible. I used cheese spread enriched with herbs, young spinach and basil to make green tart. All of the vegetables are available during all the year long but if we eat what nature gives us at certain season at our homes/countries, their taste is richer and we also support our own people and their hard work !

Rustic Vegetarian Spinach Tart

For this tart, its filling actually, there is an optional version to use scallions or leek. All greens work well.

The base for this tart is simple pastry which makes the process less complicated. While you leave it aside to rest, you make the filling. I plan to use the same pastry recipe to make figs and carob tart to check if it really works well.

Ingredients
  • Ingredients for pastry:
  • 1,5 cup flour
  • Salt to taste
  • 3 Tbsp butter, softened
  • 2 eggs
  • 3 Tbsp sour cream
  • Pinch of baking powder
  • Ingredients for filling:
  • 1,5 Tbsp finely chopped basil leaves, fresh
  • 5 Tbsp finely chopped spinach leaves, previously cooked
  • ½ lime zest, grated
  • Juice of 1 lime
  • Salt to taste
  • 4 Tbsp Parmesan cheese grated
  • Pinch of baking powder
  • 2 eggs
  • 1 garlic clove, chopped
  • 8 Tbsp Cream cheese spread with herbs
Instructions
  1. On a table, make a pastry of flour, salt, butter eggs and sour cream and baking powder.
  2. Leave the pastry aside and take a bowl to prepare a filling.
  3. Mix the eggs first and slowly add all the rest of filling ingredients to have a smooth texture.
  4. Preheat the oven to 180 C/ 356 F).
  5. Cut the baking paper to fit the baking dish and its sides (3,5 cups volume)
  6. Oil the baking paper.
  7. Roll the pastry to the size that fits the dish and its sides so the filling fills it up to the top. The sides of the pastry should be 1 inch high.
  8. Pour in the filling and put in the oven.
  9. Bake for 35 minutes or until the light golden crust appears on the top of the tart.
