Rustic Vegetarian Spinach Tart: Mediterranean dish at its best ! The taste is irresistible. Crust recipe is made from scratch and filling for this tart is made of chopped spinach, garlic, parmesan, cheese and eggs. Pastry is home made with sour cream and eggs. It is great base for any other vegetarian or meat version.
It is late summer, second fresh spinach season this year and the best time to make Rustic Vegetarian Spinach Tart. Although I made it with spinach, the possibilities are endless. You may use scallions, leek or kale instead of spinach and use different cheeses for a different flavor. I prefer cream cheese with herb flavor but any other option works well. Even a bit of feta matches the rest of ingredients to have great savory spinach tart.
To make spinach tart, spinach quiche or soup, fresh spinach is the best, needless to say but frozen chopped spinach is great substitute too.
This Rustic Vegetarian Spinach Tart takes 55 minutes of total time; preparation could be done a day ahead; you mix the pastry a day ahead and roll it out on busy Monday, for instance, and fill. Cook time takes 35 minutes only and here you have great week dinner for the family of four !
Once you scroll down for the recipe, you’ll see I added some chopped fresh basil leaves to egg mixture together with other ingredients. You can omit this one and add thyme or any other herb you prefer.
Also, if you just simply skip any herbs, it’s fine too.

Ingredients
- Ingredients for pastry:
- 1 1/2 cup flour
- Salt to taste
- 3 Tbsp butter, softened
- 2 eggs
- 3 Tbsp sour cream
- Pinch of baking powder
- Ingredients for filling:
- 1 1/2 Tbsp finely chopped fresh basil leaves
- 5 Tbsp finely chopped spinach leaves, previously cooked
- 1/2 lime zest, grated
- Juice of 1 lime
- Salt to taste
- 4 Tbsp Parmesan cheese grated
- Pinch of baking powder
- 2 eggs
- 1 garlic clove, chopped
- 8 Tbsp Cream cheese spread with herbs
Instructions

On a table, make a pastry of flour, salt, butter eggs and sour cream and baking powder.

Leave the pastry aside and take a bowl to prepare a filling.

Mix the eggs first and slowly add all the rest of filling ingredients to have a smooth texture.

Preheat the oven to 180 C/ 356 F).

Cut the baking paper to fit the baking dish and its sides (3,5 cups volume)

Oil the baking paper.

Roll the pastry to the size that fits the dish and its sides so the filling fills it up to the top. The sides of the pastry should be 1 inch high.

Pour in the filling and put in the oven.

Bake for 35 minutes or until the light golden crust appears on the top of the tart.
