This is peanut butter sauce and noodles recipe for two people garnished with edible flowers. You may do the same or garnish this delicious dish with red pepper flakes, sesame seeds, chopped peanuts or garlic. It is all about what you prefer.

Also, we had this peanut butter noodles as main dish, but you may combine it with grilled chicken or turkey. It tastes great but then you have meaty, not vegetarian version. Easy vegan stir fry is also great option!

 

Instead of udon, you may use rice noodles, ramen noodles or Italian pasta. As long as you just strain it and not rinse with water, every kind is great.

Why shouldn’t you rinse your pasta before serving?

The starch in the water is what helps the sauce adhere to your pasta. Rinsing pasta will cool it and prevent absorption of your sauce. Which is better crunchy or creamy peanut butter to use?

It may happen your sauce does not come together easy if you use crunchy peanut butter. That’s why I suggest creamy type. Also, if you are not peanut butter fan, you may use tahini paste. Ingredients

  • Udon noodles– boiled according to packing instructions
  • Sauce ingredients:
  • 2 Tbsp peanut butter
  • 8 Tbsp chicken broth or hot water
  • Chili to taste
  • 1 tsp soy sauce
  • 2 Tbsp heavy cream
  • Salt and ground black pepper to taste

Instructions

  1. In a pot, boil the noodles according to the instructions on the package.
  2. In medium sized pan, combine peanut butter, broth or water, chili and soy sauce.

  3. Let the mixture boil for 1 – 2 minutes and add heavy cream, salt, and ground black pepper to taste.

  4. Strain the noodles, pour peanut sauce on the top, garnish and serve.
