This lemon poppy seed cake with Greek yogurt is small size dessert. Our cake pan volume is 3 ½ cups and this yogurt cake can be made in loaf pan as well.

How to make this lemon yogurt poppy seed cake?

You start with fitting parchment paper to your dish, both the bottom and the sides. Then you butter or spray it and leave it aside for a while. In large mixing bowl, you combine dry ingredients. Then you whisk egg whites in another bowl, leave aside, and combine dry and wet ingredients. After you fold in egg whites, you bake it and cool, so your glaze does not slide.

Ingredients

  • Ingredients for batter:
  • 2 eggs, separated
  • pinch of salt
  • 6 Tbsp white sugar
  • 1 Tbsp baking powder
  • 1 Tbsp poppy seed
  • 1 cup + 1 Tbsp all-purpose flour
  • 1 Tbsp lemon juice
  • 3 drops of edible lemon extract
  • 1 Tbsp vanilla extract
  • 4 Tbsp Greek yogurt
  • 1 Tbsp butter, melted, unsalted
  • Ingredients for the glaze:
  • 1 Tbsp white sugar
  • 1 cup yogurt
  • 1 Tbsp gelatin or agar flakes
  • Vanilla extract to taste

Instructions

  1. Cut the parchment paper to fit the bottom and the side of a baking dish. Butter the paper lightly.

  2. In a large bowl, mix all the dry cake ingredients.

  3. In medium sized bowl,  whisk the egg whites with the pinch of salt until foamy.

  4. Preheat the oven to 356 F / 180 C.

  5. Combine fresh lemon juice, lemon extract, vanilla extract, yogurt and butter.

  6. Whisk dry and wet ingredients to get smooth batter.

  7. Fold in egg whites using spatula to keep as much airy bubbles to get soft and creamy batter.

  8. Pour the mixture into the baking dish.

  9. Bake for about 20 minutes or until the toothpick comes out clean from the middle of the cake.

  10. Let it cool a bit and place it on the plate. Leave it to cool completely.

  11. In a small pot, mix all the ingredients for the yogurt glaze and bring to boil.

  12. Boil on medium heat for one minute and gently pour over the cake.

  13. Garnish with poppy seeds and poppy flower.
