No Bake Energy Balls
YumNo Bake Energy Balls are healthy, time saving and nutritious breakfast or a snack. Energy boosting !
These balls are perfect for breakfast with your coffee. Wrap them into a wax paper and take to work. I usually do that and have my breakfast there. They are perfect for all of you no-early-breakfast types. Since you get 22 balls it is like having 22 bites. For me, it is enough to have 6 – 8 for breakfast. Good thing about this kind of dish is that it makes your digestion process balanced. Eating them, you do not have one of those „I need some sugar, immediately“ attacks.
Also, No Bake Energy Balls force me to chew longer than usually and it makes an excellent practice for my jaw.
Luckily this dish can stay in fridge for several days so it is also a time saver, especially if you are used to prepare your dishes at home.
It is not necessary to use cranberries. Any dried fruit is good: prunes, apricots, figs, dates, raisins, blueberries, cherries … choose your favorite ones, or the ones at hand.
No Bake Energy Balls
Ingredients
- 1 Tbsp pumpkin seeds
- 1 Tbsp flax seeds
- 2 Tbsp sesame seeds
- 3 Tbsp almond sticks, roasted
- 2 Tbsp dried cranberries
- 2 Tbsp coconut flour
- ½ cup + 1 Tbsp honey
- 1/3 cup butter, melted
- 1 cup rolled oat flakes
- Pinch of salt
- 4 Tbsp boiling water
Instructions

In a food processor / blender, grind pumpkin seeds, almond sticks and dried cranberries to get the approx. size of the rolled oat flakes.

In a bowl, mix dry ingredients and add all the wet ones to get a smooth mixture.

Prepare a tray and put the baking paper on it.

Using your hands, form the balls of 1 inch in diameter and lay them on a baking paper.

Put in a fridge overnight so the balls become firm for the other day.
