Tortilla Chips Breakfast Bake – mouthwatering breakfast Mexican way. Spicy and bursting with flavor !
Basically, it is about chili con carne but the dress is different. At first glance it looks like pizza but the bottom is made of two corn tortillas. To make preparation and baking easier, use baking dish that fits the size of tortillas.
There is one slightly different ingredient that makes this dish looks like something special and it is simple crispy salted corn tortilla chips that I eat up while watching movies. This Breakfast Bake invites you to sit and taste. I have never been to chili cook-off but would be very much interested to see the reactions to this dish. Also, I have decided to sort it to breakfast category since such a a dish is my son’s favorite. Having this in the morning he says to be OK until late lunch or dinner.
Tortilla Chips Breakfast Bake
- 2 corn tortillas
- Crispy salted corn tortilla chips – 1 pack
- 2 Tbsp sunflower oil
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 1/2 cup beef meat, minced
- 1 bell pepper, green
- 1 cup red beans
- 2 tsp tomato paste
- 1 cup sweet corn kernels
- 1 sq. in. dark chocolate
- 2 Tbsp Chili spices mix ( Chili con carne mix )
- 1 Tbsp hard cheese, grated
- 1 cup semi hard cheese, grated
- Salt to taste
Prepare the baking dish that tortillas fit to by their size.
Preheat the oven to 180 C / 356 F.
In a pan, fry oil, garlic, onion and meat for 15 minutes.
Add bell pepper, beans, tomato paste and sweet corn, cheeses, dark chocolate and spices mix.
Put the mixture on the tortillas.
Top the meat mixture with tortilla chips and bake for 15 minutes, until the cheeses melt.
Serve while still hot.
