Depending on the occasion, this bars could be an appetizer or even a Saturday lunch.
My friend had her son’s birthday and made this dish for the parents accompanying. Beer suits just fine !
The day after, we had, what we call, The Day Two, which means „cleaning“ the leftovers and these bars wormed in microwave were great. So if there is a chance that you find some bars on the plate the day after a beer party, do not throw them away. It may turn to a great lunch.
As about the quantity, it can easily feed 6 hungry persons.
Amazing Ham and Bacon Bars
- 4 eggs
- 1 cup vegetable oil
- 1 cup yogurt
- 2 cups flour
- 2 tsp baking powder
- 2 cups ham, cubed
- 1 1/2 cup cheese, cubed, semi hard
- 4 Tbsp red bell pepper, cubed
- 2 Tbsp fresh parsley leaves, chopped
- 3 Tbsp sweet corn
- Salt to taste
- Smoked bacon slices to garnish
Preheat the oven to 180 C / 356 F.
Butter and flour the baking dish ( volume: 8 cups)
In a bowl, mix eggs, oil and yogurt.
Add ham, cheese, flour, baking powder, bell pepper, parsley, corn and salt. Mix gently.
Pour the mixture into the baking dish.
Garnish with smoked bacon slices.
Bake for 30 minutes or until toothpick comes out clean.
