These truffles recipe is an easy to make and impress your family and friends and to pack as a gift for your foodie friends. If doing so, you need to make double batch multiplying the ingredients by two and there you have it all covered!
How to make these chocolate coconut truffles?
Let me start with chocolate: I use white chocolate bar and grate it old fashioned way using box grater. Before you grate it, leave it in the freezer for a while since it tends to melt while grating. Otherwise, chocolate melts quickly while in your hands. White chocolate chips cannot be chopped that finely to combine all the ingredients to get airy texture you want to form the balls and roll in coconut. Make sure to use high quality chocolate for rich flavours.

Next ingredient you need is shredded coconut. I suggest you use unsweetened type for these coconut truffles. It’s because white chocolate is already loaded with sugar.
As about rum, the best is white, but I didn’t have any, so I added dark rum and truffles turned out great! After all, it’s only one tablespoon for additional flavor.
How long do these chocolate coconut truffles last?
It is best to consume these white chocolate truffles within 3 days. We store them in airtight box in the fridge, especially if the heat is on. Doing so, you avoid melting your butter and chocolate.
If you plan to freeze your chocolate truffles, wrap them tightly and freeze up to 2 months.

Ingredients
- 1 cup grated white chocolate
- 4 Tbsp powdered sugar
- 1 Tbsp rum
- few drops of vanilla extract
- 1 Tbsp lemon juice
- 4 Tbsp unsweetened shredded coconut + 3 Tbsp extra to roll the balls
- 3 Tbsp butter, room temperature room temperature
Instructions

In a bowl, carefully mix chocolate, icing sugar, rum, lemon juice, coconut flour and butter, using tablespoon.

On a plate, put 3 Tbsp of coconut flour to prepare to roll the balls in it.

Make the balls using your hands.

Roll each of them in coconut flour and lay on a plate.
