To be honest, 1 cup of pumpkin puree was left after I did the Pumpkin Cheesecake Bars so this is a frugal dish managing to do with leftovers. You can cook semolina pudding the evening before, lightly oil the dishes, pour hot semolina into them, lay aside and serve kids for breakfast next day instead of pancakes.
If you prefer hot dishes, you can make this simple festive frugal dish in the morning. just wait for several minutes for semolina mixture to become firm.
To serve , pour some sauce to plate, lay semolina figures on and garnish with more sauce, dry cranberries and cinnamon powder.
- SEMOLINA MIX:
- 1 cup milk
- 1 tsp sugar
- 3 Tbsp semolina
- PUMPKIN APPLE SAUCE:
- 1 cup pumpkin puree + 7 Tbsp water
- 1 apple, peeled, grated
- 1 Tbsp vanilla pudding powder + 1 Tbsp sugar
In a small pot, put all the ingredients together, boil for 3 minutes. Mix well to avoid lumps.
While still hot, pour to small festive dishes, lightly oiled in order to take them out easier.
In a small cup, mix pudding powder and sugar.
In a small pot, bring to boil puree, water and apple.
Add pudding and sugar mixure and do not stop mixing to avoid lumps.
Let it boil for 3 minutes.
