At the first glance, these bars do not look very special. Coffee cups are the ones that get all the attention here. But, if you decide to bake this bars, you will not regret it. They remain fresh for several days and really go well with coffee after good festive lunch. They are not created for holidays only. It is the season. Besides, the ingredients guarantee success ! If you do not have Ginger cookies spices mix, you can mix a bit by yourself using minced cinnamon, ginger, nutmeg and anise to taste.

Since I am etymology fan, I have found that the word pumpkin comes from pepon – large melon, on Greek, which reminds me of the movie „My Fat Greek Wedding“: Kostas “Gus” Portokalos, the Windex bottle-toting dad was always defining the origins of the words. Of course, all of them of Greek origin.

Ingredients

  • CRUST:
  • 1 1/2 cup butter cookies crumbs
  • 3 Tbsp butter unsalted
  • PUMPKIN LAYER:
  • 1 cup pumpkin puree + 3 Tbsp water
  • 1 tsp Ginger cookies spices mix
  • 1 tsp lemon juice
  • 1 tsp pectin + 3 tsp sugar
  • 3 Tbsp sugar
  • CHEESECAKE LAYER:
  • 1 cup cream cheese
  • 2 eggs
  • 8 Tbsp sugar
  • 1 Tbsp vanilla extract
  • 4 Tbsp semolina
  • 1 tsp lemon juice
  • TOPPING:
  • 1 cup sour cream
  • 1 Tbsp vanilla extract
  • 4 Tbsp sugar

Instructions

  1. Lightly butter baking pan (surface of 7 x 10 inches)
  2. In a bowl, mix cookies crumbs and butter using fingers.
  3. Lay the mixture into the baking dish, even it with fingertips.
  4. In a pot, mix Pumpkin layer ingredients and let it boil for 5 minutes.
  5. While still hot, gently pour the mixture on the crust layer and let it cool for 5 minutes. This will help you to lay cheese mixture easier.
  6. Preheat oven to 180 C/ 356 F.
  7. In a bowl, mix cheese layer ingredients, starting with eggs and sugar.
  8. When you get fine texture, lay it carefully onto pumpkin layer.
  9. Bake for 25 minutes.
  10. In the meantime, mix topping ingredients together.
  11. Take the cake out and pour topping over it and return it to the oven for additional 10 minutes at 240 C / 464 F.
  12. When serving, garnish with ginger cookies spices mix or cinnamon.
