How to make bacon wrapped chicken livers?
Before you start wrapping them into bacon, rinse your batch of chicken liver. That way you get rid of dirt and bacteria. Also, it is important to cook chicken livers thoroughly to help kill any harmful bacteria that may be present. For this recipe, we need 10 to 15 minutes of grilling or skillet frying.
So, you start with mashed potatoes. Depending on how busy or hungry you are, you can prepare old fashioned mashed potatoes using potatoes or fix some store-bought bag packed. We leave it aside but close to the source of heat to keep it warm to serve once wrapped chicken are done.
You cut each slice of smoked bacon to get 2 ½ inches long one and wrap around livers.
Liver parts should be bite or two sized. I suggest you pin bacon wrapped chicken liver with simple wooden toothpick. That way you are sure your tasty and easy food won’t fall apart during cooking!
What to serve with wrapped chicken livers?
As explained in this recipe, we prefer mashed potatoes, but you can always make some polenta, rice, garlic bread, au gratin potatoes, roasted vegetables, sauteed mushrooms, or simple toast.
How long can you keep bacon wrapped liver leftovers in the fridge?
Frankly, we have never had any leftovers. This dish is the one of those “gone in a flash” recipes.
If, however, you got some, they are safe to eat after two days in the fridge. The best is that they taste great if reheated in microwave.

Ingredients
- For potato layer, you need one pack of Instant mashed potatoes. If the instructions say to add water / milk and butter, prepare them as well.
- 1 ½ cup chicken liver, cut to 2 inches parts
- 3 Tbsp oil
- 25 thin slices of smoked bacon, 2 ½ inches long
- 25 toothpicks
Instructions

Prepare mashed potatoes according to instructions.

Put oil in a frying pan.

Wrap chicken liver into bacon slices and pin them with the toothpick. Do that with all liver. I made 25 rolls.

Fry rolls on stove top, on medium heat until well baked and golden brown on all sides. It should take 10-15 minutes. Just make sure they are not pink in the middle.

Serve on mashed potatoes with slice of lemon to sprinkle over rolls.

If needed, add salt and grounded black pepper to taste.
