When it comes to meat, chicken and turkey are first on our list. Chicken prepared this way, with thin smoked bacon slices ( Guanciale like ) tastes amazingly since it gives smoky flavor to meat and drippings as well.
If you are drippings saver, this one is a winner since it also gives perfect taste to pasta or vegetables served as a side dish.
If any dripping left, I suggest you keep it, store in the fridge and use for Gnocchi with Zucchini Sauce since it gives addictive meaty taste to this frugal zucchini beauty.
As you have noticed, I placed baked meat on the top of home made pasta boiled in salty water and bathed in drippings. You can do exactly the same using store bought pasta o serve with vegetables only:
The first time I published this lunch / dinner idea was in July 2015. and now, looking back I see the issues I was dealing with. I just did not know better:

Roasted Chicken with Bacon Cover
Ingredients
- Ingredients:
- 1 chicken approx. 3 lb or 2 larger chicken breasts
- 4 Tbsp sunflower oil
- 12-14 smoked bacon slices
- Vegetables and / or pasta to taste
- Cayenne pepper and salt to taste
- MARINADE:
- 12 cups water
- 1 Tbsp salt
- 1 tsp sugar
- 1 cup white wine
- 2 bay leaves
- 1 onion, chopped
- 2 carrots, chopped
- Black peper

INSTRUCTIONS:

Day before you bake the chicken, boil the marinade. Leave to cool.

Put meat in large bowl and cover with marinade. Leave to rest overnight.

Next day, preheat the oven to 200 C / 392 F.

Spread oil on the bottom of baking dish.

Remove meat from marinade to baking dish.

Cover meat with bacon lattice. For the best results, attach them to meat with toothpicks.

Bake for 30 minutes without vegetables.

Add zuchini, red bell pepper, onion and carrot wedges to taste and bake for additional 20 minutes.

When done, you can serve meat and vegetables together or prepare pasta according to your taste and serve.

Vegetables could be also served garnished with chopped garlic and aceto balsamico.
